Nuttzo Oatmeal Cookies

In December I got some crazy good deals from a new website called Open Sky. One of the killer deals was 2 bottles of Nuttzo Multi-Nut Butter.

I adore peanut butter and almond butter so I was excited to try this out. The texture is super crunchy and I can taste the brazil nuts more then anything else. I like it. It is ok on sandwiches and in my oatmeal but I am not in love with it. Plus I really want my husband to try it out since it is good for his heart. His doctor wants him to increase Omega 3s. So last night I decided to make cookies. I just used a recipe for Peanut Butter-chocolate chip oatmeal cookies that I found online here and adapted to my taste. Obviously if you don’t have a jar of Nuttzo you can use any nut butter as well.IMG_0562 Nuttzo Chocolate Chip Oatmeal Cookies

1 1/2 Cups Old Fashioned Rolled Oats

1/3 cup whole wheat flour

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 cup packed light brown sugar

1/2 cup granulated sugar

1 stick unsalted butter, softened

1/4 cup Nuttzo Nut butter

2 large eggs

1/2 tsp pure vanilla extract

1 cup semisweet chocolate chips

Preheat oven to 350 degrees. Put sugars, butter and nut butter in a bowl and mix with electric mixer on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Add flour, baking soda, baking powder and salt and mix well. Add oats and mix until just combined. Mix in chocolate chips.

Drop balls of dough 2 inches apart on baking sheets. I didn’t use any spray as there was enough butter and oil in nut butter to not need any. Bake cookies rotating halfway through until golden brown, 13 to 15 minutes. Let cool on wire racks. Enjoy.

I think they turned out really good and I love that they have so much oatmeal in them. The are crispy around the edges and chewy inside. Next time I might add more nut butter for more of a nuttier cookie but I really enjoyed them. When the husband comes home tonight I will let you know what he thinks.

  1. You are so daring to try new products like that! I am skeptical about food. I believe that whole pizza not being that great. But most healthy food won't taste the same. Way to go for being brave!

  2. Those cookies sound excellent! Great use for a 'not-in-love-with' peanut butter :)
