I love this hotel - the history and the charm are the best. It was the first time I actually spent the night and I am sad to report the rooms are tiny. Think New York City small. It was fun to stay one night but for those prices I can't say I will be spending more time there. I arrived late on Thursday night. Thanks mom for picking me up at the airport so late. </p> <p>A package had arrived from Mike and Becky on Thursday with a note to my mom that said do not open until Debbie arrives. So first thing Friday morning I dove at that package. We screamed, we cried. We jumped up and down. We figured it was too early to call Mike and Becky so I texted them BOTH! Becky called us back as she was waking up to go to a work meeting anyways and patiently answered our million and one questions. Since Mike was in the shower he had to call us back later. We also had to get permission on who we could tell. You know my mom could not keep this a secret for long. This is her dream come true to be a grandma.</p> <p>So we headed over to Grandma Davis to tell her and that gave me the chance to say hi as well. Since I don’t get to see her very often it was nice to see her three days in a row on this trip.</p> <p>A million stops later – which included my mom telling the local gas station clerk she was going to be a Grandma and her work we finally had to high tail it to Salt Lake City for a day at the Spa and Flemings. (My mother’s day present to her.)</p> <p>We had massages, facials, and pedicures. It was so much fun to have the time to relax and enjoy the happiness. After 3 hours of pampering we were really feeling euphoria. </p> <p>After our spa day, we got dressed up and headed to Flemings for dinner. I love SLC Flemings. They are always so observant to your needs and we had so much fun with our waiter. Plus the food was great. We tried the new mushroom ravioli appetizer which was over the top good rich. It was one of those that I would have licked the plate clean if I hadn’t been in a restaurant. Mom got the filet and I got Salmon and of course the Mac N Cheese. But we were so stuffed we ended taking a lot of it home because we had to save room for dessert. It was always fun to spend time with her. It is never enough. I love every minute. I am very excited to go back to Utah for her 90th birthday. I got to go meet my new nephew and catch up with the Warnick’s/ Rasband’s. On Monday, I went up to the Rasband’s to hang out since Dad and Susan were working. I don’t know how Heather does all she does with the housework and the hectic schedule. I was exhausted by the end of day. Dad and I went on a dinner date where I got a bison burger for dinner. Yum – bison burgers are so much better then hamburgers. </p> <p>Then before I knew it it was time to fly back home. Due to class the first night I could see them was Thursday and they had already been here for almost four days! As always it is fun to see all the delicious fresh foods and homemade crafts. It is a complex of Spanish style buildings on a golf course. I thought the grounds were beautiful. My only complaint was that someone was smoking in a room next to ours and we could smell it sometimes. It was just so beautiful. The resort had huge Birds of Paradise all around and I took over 50 pictures of them. We both had massages, I also received a free sugar scrub and we enjoyed the hot tub and other amenities. The best part is for a couple of hours neither one of us had a phones. We asked the concierge at the hotel where we could eat overlooking the ocean and she recommended this place. She also gave us directions and made the reservations for us. You see I have this goal to go to every single Roy’s Restaurant. I am a huge fan of Roy’s Hawaiian Fusion. Due to the hectic schedule and location the Roy’s that I chose was Roy’s La Jolla. I have been a big fan of Chef Garrett for awhile and I wanted to try his masterpieces. This Roy’s looks a little different from the outside. We got a great price on a night’s stay in the Bellagio. That hotel was awesome. Luxurious but not over the top Vegas style. Or maybe I should say we did it. Bruce and I completed our first 5k.  We chose to participate in the Gasparilla 5k about a month ago. Bruce was going to walk it and I ran it. I had a goal to run it in under 40 minutes. I am relatively new to running and most importantly I didn’t want to injure myself. Well yesterday we got ready and headed to downtown Tampa. It was cold and raining. Not an ideal situation but we decided to just make it fun and enjoy the experience. The Gasparilla 5k had over 9,000 participants so it was packed. I am glad we got there early but it still took us over two minutes to cross the starting line. The first mile was great if not crowded. I wasn’t ever planning on going fast so I paced myself. I didn’t let all the people around me frustrate me. By the second mile I hit a wall. I was soaked including my shoes which made it very uncomfortable. It was so slippery out there and I watched so many people fall.  I was on the same street of the JDRF fall and I didn’t want to repeat the same pattern so I was being VERY CAREFUL. At the half way point we turned around and I decided to spend my time looking  for Bruce. When I saw him it was a big boost and I knew I could finish. But I had given up on making my goal of under 40 minutes. I made it to the finish line to see the clock say 43 minutes so I thought I was close to my goal and was proud of my accomplishment. </p> <p>When I got home I was able to pull up the results online and was shocked…yes my chip time was 39:59. I reached my goal. Her version was vegetarian but <a href="http://www.marthastewart.com/recipe/spicy-enchiladas-with-pumpkin-sauce">her inspiration</a> is really what inspired me. Thank you Martha for making a really yummy dinner.</p> <p>Of course I changed around Martha’s enchiladas so here is my version. </p> <p><u>Pumpkin Turkey Enchiladas</u></p> <p>2 1/2 cups cooked turkey, shredded or cut into very small pieces (chicken would be good too!)</p> <p>1/2 onion, chopped</p> <p>1 tsp olive oil</p> <p>Sea Salt and Pepper</p> <p>1 can (15 ounces) pumpkin puree</p> <p>2 tsp minced garlic</p> <p>1 poblano chile (if you want more heat use jalapeno or another pepper of your choice)</p> <p>1 tsp <a href="http://www.mrsdash.com/products/seasoning-southwest-chipotle.aspx">Mrs. Dash Southwest Chipotle seasoning</a></p> <p>1/4 cup half and half (optional)</p> <p>2 1/2 cups water</p> <p>10-12 corn tortillas (6 in)</p> <p>1 1/2 cups grated cheese ( we used mozzarella)</p> <p>Preheat oven to 425 degrees. Spray a 9x13 pan with Pam. In a sauté pan, cook onions till clear and soft. Add turkey and salt and pepper to taste. </p> <p>In a blender, puree pumpkin, garlic, poblano, Southwest seasoning, half and half and water until smooth. Add salt and pepper to taste. Ensure to hold lid on blender as it is very full. Pour 1 cup of sauce in the bottom of baking dish.</p> <p>Fill tortillas with turkey mixture, roll up tortillas and place seam side down in baking dish. Pour remaining sauce on top; sprinkle with cheese. Place dish in oven and back until cheese is golden and sauce is bubbling about 25 minutes. I cuddled with the husband for 10 minutes before heading over to the gym for a 30 minute elliptical workout. Home to shower and eat then off to work. It started off as a very normal day at work. Last day of the month which is crazy busy trying to get everything done and my checklist is as long as my arm. Then I get an email from my bosses’ boss that he got from one of the stores that I do accounting for -</p> <p><font color="#000000">Debbie Burke has been my accountant for over a year, and every single day she is timely, consistent, helpful, thorough, knowledgeable and over all a delight to work with.  I feel that she has helped me better understand my own business, seeing it through her eyes, and there has never been a single unanswered question or request</font>.</p> <p>There is more to the email but seriously how sweet is that???? I was so proud and a little embarrassed. You see I am a type A perfectionist and I am so hard on myself. I don’t consider what I do amazing. BUT I SHOULD! I work really hard to serve and give 110%. It is wonderful to be recognized. It hasn’t happened at work in a really long time. For the remainder of the day I was on cloud 9. </p> <p>But that is not all. No when I got home I had two packages waiting for me. The first was Sparky’s new water bowl or water fountain. We had his old water fountain for more then 3 years and the plastic had gotten really disgusting plus it was causing <a href="http://cats.about.com/cs/healthissues/a/acne.htm">acne</a> a sign of allergies. SO we purchased this ceramic water fountain that bubbles and is dishwasher safe. It is beautiful and well worth the $40. It got me in the mood and I finally decided last night was the night. I made some modifications to the recipe. Since I still had turkey in the freezer from Christmas Eve I knew it would be a simple swap and allow me to use leftovers. Here is my version. Coat 10-inch round shallow baking dish with cooking spray. Coat a large non stick frying pan with cooking spray. Add butter and melt over medium heat. Add onion and mushrooms and cook until tender, stirring frequently, about 5 minutes. Stir in paprika, thyme, salt and pepper. Add peas and carrots, broth and turkey. Cover and simmer 15 minutes. In a small cup, combine flour and 1/4 cup of the evaporated mild, stir into turkey mixture. Cook over medium heat until thickened, stirring constantly, about 2 minutes. Stir in remaining 1/4 cup of evaporated milk and cook until mixture is slightly thickened, 2 to 3 minutes more. Last chance to add additional seasoning –I added more pepper because we love pepper. Spoon turkey mixture into prepared baking dish. Unroll crescent rolls and arrange dough around inside of edge of baking dish to form a border with a whole in the middle. See picture above. Bake until rolls are golden brown and filling is bubbly, about 15 minutes. I neglected to read that one was a serving until after I had cooked both.After eating one I was still unsatisfied. So 400 calories later, what did I think. It was ok. The crust was really crunchy and chewy which I loved but the tomato sauce tasted plain and the cheese was not up to par. It didn’t melt very good. There are so much good quality cheese out there that can go on pizza that don’t add tons of calories but this was just wrong. I can’t say I would get this again. Put sugars, butter and nut butter in a bowl and mix with electric mixer on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Add flour, baking soda, baking powder and salt and mix well. Add oats and mix until just combined. Mix in chocolate chips. </p> <p>Drop balls of dough 2 inches apart on baking sheets. I didn’t use any spray as there was enough butter and oil in nut butter to not need any. Bake cookies rotating halfway through until golden brown, 13 to 15 minutes. Let cool on wire racks. Add garlic and cook 30 seconds.  Stir in flour; then add milk slowly, stirring.</p> <p>3.  Add steamed potatoes and stir to mix. Bring to a boil. Stir in 1/2 cup of the sharp cheddar cheese and 2 tbsp of the shredded parmesan cheese, garlic salt and pepper.</p> <p>4.  Pour mixture into prepared baking dish and level out surface. Bake for 20 minutes, uncovered. </p> <p>5.  Change oven temperature to broil. Sprinkle remaining cheese over potatoes. I like the sound of it and thought that 10 would be reasonable as long as I kept them simple goals. My overall goal is to continue living a healthier, happier life. </p> <p>1. 10,000 steps a day. I can’t believe how hard this is.</p> <p>2. Eat breakfast every day. I am good 60% of the time but there is still room for improvement and I do feel better when I eat breakfast.</p> <p>3. Run a 5k. I am thinking of doing the Gasparilla 5k in February but I need to find the courage to do it still.</p> <p>4. Make one day a week a vegetarian day. It is a cheaper way for us to eat and I want to stretch myself with learning how to make healthy hearty vegetarian meals that my husband will love. Yes I asked him before posting this and he said he is fine with it. He already loves Eggplant Parmesan and vegetable lasagna.</p> <p>5. Eat dinner 5 nights a week at a table. How come it is so much easier to sit in front of the TV? This is a habit that needs to be broken. I may have to start with doing 2 dinners a week at the table. But by next December I will be at 5. I can only say 5 because on school nights I eat at a desk. </p> <p>6. Yoga 2x a week. Yoga really helps me manage my stress and I really need to do more.</p> <p>7. Celebrate my wins by giving myself rewards for finishing a semester of school. I am still figuring out what rewards I want – I have a list of wants- a book, pedicure, massage…so I just have figure it out.</p> <p>8. Read 5 books for fun. Since getting back into school I have rediscovered my love for reading. I should say books that aren’t work or school related but that are on topics that I find interesting. </p> <p>9. Travel somewhere I have never been. I am hoping Carlsbad CA in April and maybe Hawaii for Christmas. Maybe even a weekend trip to Winter Park or somewhere else in Florida.</p> <p>10. Do things for other people. Bruce and I are planning on doing the <a href="http://disneyparks.disney.go.com/disneyparks/en_US/WhatWillYouCelebrate/index?name=Give-A-Day-Get-A-Disney-Day">Disney give a day, get a day</a>.
